Ingredients
Scale
- 2 packets unflavored gelatin, approximately 14g
- 2 cups plain Greek yogurt
- 1½ cups fresh berries, such as blueberries, strawberries, raspberries, or blackberries
Instructions
- Sprinkle the unflavored gelatin over ¼ cup of cold water and allow it to sit undisturbed for 5 minutes to bloom.
- Heat the bloomed gelatin mixture gently over low heat for 2 minutes, stirring constantly until completely dissolved and clear.
- Remove the gelatin mixture from the heat and allow it to cool slightly for 3 to 4 minutes.
- Place the plain Greek yogurt in a large mixing bowl and whisk until smooth.
- Slowly drizzle the cooled gelatin mixture into the yogurt while stirring continuously.
- Fold gently with a rubber spatula until the mixture is smooth and evenly combined.
- Divide the gelatin-yogurt mixture evenly among 4 serving glasses or bowls.
- Top each portion with fresh berries, pressing them gently into the surface.
- Refrigerate for at least 4 hours, or overnight, until completely set.
- Serve chilled directly from the refrigerator.
Notes
Bloom the gelatin fully before heating for the smoothest texture. Use plain Greek yogurt and unsweetened berries to keep the recipe naturally flavorful and aligned with its lighter dessert focus.
