Ingredients
Turkey breast cutlets, 1.5 lbs (thinly sliced)
Breadcrumbs, 1/2 cup
Parmesan cheese, 1/3 cup (grated)
Eggs, 2 (beaten)
Olive oil, 2 tbsp
Instructions
Preheat oven to 400°F (200°C)
Place turkey cutlets in a shallow dish
In another dish, mix breadcrumbs and parmesan
Beat eggs in a third dish
Dip each cutlet into egg, then coat evenly with breadcrumb-mix
Lightly brush with olive oil
Place on baking sheet and bake 20 minutes, flipping halfway
Notes
Substitute chicken cutlets if preferred
Use panko breadcrumbs for extra crispiness
Serve with lemon wedges or a herb garnish
Store leftovers in an airtight container for up to 3 days
