Instructions
- Combine the shredded cabbage, diced carrots, minced garlic, fresh ginger, green onions, and ground chicken in a medium mixing bowl.
- Add the low-sodium soy sauce, sesame oil, and black pepper to the filling mixture.
- Stir thoroughly until all ingredients are evenly combined.
- Allow the filling to rest for 5 minutes so the flavors meld and the vegetables release excess moisture.
- Drain any accumulated liquid from the filling mixture using a fine-mesh strainer.
- Lay one spring roll wrapper on a clean, dry work surface in a diamond orientation.
- Place approximately 2 tablespoons of filling in the center-lower portion of the wrapper.
- Fold the bottom corner up and over the filling, rolling tightly once.
- Fold the left and right corners inward toward the center.
- Dip your finger in water and moisten the top corner of the wrapper.
- Continue rolling upward until the lumpia is completely sealed.
- Place the finished lumpia seam-side down on a parchment-lined plate.
- Repeat with the remaining wrappers and filling.
- Preheat the air fryer to 380°F for 3 minutes.
- Arrange the assembled lumpia in the air fryer basket in a single layer without overlapping.
- Lightly spray each lumpia with cooking spray, coating all sides evenly.
- Air fry for 8 minutes at 380°F.
- Shake the basket gently and flip each lumpia to the other side.
- Continue air frying for 4 additional minutes until golden brown and crispy.
- Ensure any chicken-filled lumpia reaches an internal temperature of 165°F.
- Transfer the finished lumpia to a wire rack and cool for 2 minutes before serving.
Notes
Drain excess moisture from the filling before assembling to keep the wrappers crisp. Avoid overfilling the lumpia, cook in a single layer, and cool on a wire rack to preserve the golden crunch.
