  • Total Time: 27 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 12 spring roll wrappers
  • 1 cup shredded cabbage
  • ½ cup diced carrots
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 green onions, chopped
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 4 ounces ground chicken or tofu
  • Cooking spray, 2-3 sprays per wrapper
  • ¼ teaspoon black pepper
  • 2 tablespoons water, for sealing wrappers

Instructions

  1. Combine the shredded cabbage, diced carrots, minced garlic, fresh ginger, green onions, and ground chicken in a medium mixing bowl.
  2. Add the low-sodium soy sauce, sesame oil, and black pepper to the filling mixture.
  3. Stir thoroughly until all ingredients are evenly combined.
  4. Allow the filling to rest for 5 minutes so the flavors meld and the vegetables release excess moisture.
  5. Drain any accumulated liquid from the filling mixture using a fine-mesh strainer.
  6. Lay one spring roll wrapper on a clean, dry work surface in a diamond orientation.
  7. Place approximately 2 tablespoons of filling in the center-lower portion of the wrapper.
  8. Fold the bottom corner up and over the filling, rolling tightly once.
  9. Fold the left and right corners inward toward the center.
  10. Dip your finger in water and moisten the top corner of the wrapper.
  11. Continue rolling upward until the lumpia is completely sealed.
  12. Place the finished lumpia seam-side down on a parchment-lined plate.
  13. Repeat with the remaining wrappers and filling.
  14. Preheat the air fryer to 380°F for 3 minutes.
  15. Arrange the assembled lumpia in the air fryer basket in a single layer without overlapping.
  16. Lightly spray each lumpia with cooking spray, coating all sides evenly.
  17. Air fry for 8 minutes at 380°F.
  18. Shake the basket gently and flip each lumpia to the other side.
  19. Continue air frying for 4 additional minutes until golden brown and crispy.
  20. Ensure any chicken-filled lumpia reaches an internal temperature of 165°F.
  21. Transfer the finished lumpia to a wire rack and cool for 2 minutes before serving.

Notes

Drain excess moisture from the filling before assembling to keep the wrappers crisp. Avoid overfilling the lumpia, cook in a single layer, and cool on a wire rack to preserve the golden crunch.
