- 3 packets unflavored gelatin
- 1 cup vanilla protein powder
- 1/2 cup sugar-free sweetener
- 2 cups boiling water
- 1 cup cold water or unsweetened almond milk
- 2 to 3 tablespoons sugar-free flavored syrup, optional
- 1/2 cup fresh berries, optional
- 1 tablespoon lemon juice or vanilla extract
Instructions
- Measure 2 cups of boiling water into a heat-safe bowl.
- Sprinkle the unflavored gelatin packets evenly over the hot water.
- Let the gelatin bloom for 1 minute.
- Stir vigorously for 2 minutes until all gelatin granules dissolve completely.
- Add half of the vanilla protein powder to the warm gelatin mixture.
- Whisk continuously until smooth.
- Add the remaining protein powder gradually while whisking.
- Continue whisking for 3 minutes to prevent clumps.
- Add the sugar-free sweetener.
- Whisk until fully dissolved.
- Stir in sugar-free flavored syrup if using.
- Add lemon juice or vanilla extract.
- Slowly pour in cold water or unsweetened almond milk while stirring gently.
- Divide the mixture between 8 serving-sized containers or one large dish.
- Refrigerate for at least 4 hours until fully set.
- Top with fresh berries immediately before serving if desired.
- Serve chilled.
Notes
Bloom the gelatin for 1 minute before whisking, use room-temperature protein powder, and chill the bariatric gelatin recipe for weight loss for the full 4 hours so it sets silky and smooth.
