  • 1/2 cup fresh berries, optional
  • 1 tablespoon lemon juice or vanilla extract

Instructions

  1. Measure 2 cups of boiling water into a heat-safe bowl.
  2. Sprinkle the unflavored gelatin packets evenly over the hot water.
  3. Let the gelatin bloom for 1 minute.
  4. Stir vigorously for 2 minutes until all gelatin granules dissolve completely.
  5. Add half of the vanilla protein powder to the warm gelatin mixture.
  6. Whisk continuously until smooth.
  7. Add the remaining protein powder gradually while whisking.
  8. Continue whisking for 3 minutes to prevent clumps.
  9. Add the sugar-free sweetener.
  10. Whisk until fully dissolved.
  11. Stir in sugar-free flavored syrup if using.
  12. Add lemon juice or vanilla extract.
  13. Slowly pour in cold water or unsweetened almond milk while stirring gently.
  14. Divide the mixture between 8 serving-sized containers or one large dish.
  15. Refrigerate for at least 4 hours until fully set.
  16. Top with fresh berries immediately before serving if desired.
  17. Serve chilled.
