Ingredients
1.5 pounds boneless skinless chicken thighs
1 medium green cabbage, shredded
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat oven to 400°F (200°C)
Shred the cabbage into fine slices
Place chicken thighs on a large sheet pan
Season chicken with smoked paprika, cumin, garlic, salt, and pepper
Toss cabbage with olive oil and arrange around chicken
Roast for 25 minutes, then flip chicken and cabbage, and roast 5 more minutes
Let rest 5 minutes before serving
Notes
Chicken thighs stay moist and baste the cabbage as they roast
Alternate chicken breasts (leaner but drier)
Use red cabbage for colorful presentation
