- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped
Instructions
- Dice the chicken breast into 1-inch cubes.
- Cut the sweet potatoes into 1/2-inch cubes.
- Place the sweet potato cubes in cold water while preparing the remaining ingredients.
- Dice the yellow onions and red bell peppers into similar-sized pieces.
- Mince the garlic cloves finely.
- Mince the fresh ginger finely.
- Combine the curry powder, turmeric, and thyme in a small bowl.
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Add the diced chicken to the hot oil.
- Cook for 3 to 4 minutes, stirring occasionally, until the exterior is lightly browned.
- Remove the chicken from the pot and set aside on a clean plate.
- Add the diced onion to the same pot.
- Sauté for 2 to 3 minutes until translucent and fragrant.
- Add the minced garlic and ginger.
- Cook for exactly 1 minute, stirring constantly.
- Sprinkle the curry powder, turmeric, and thyme over the aromatics.
- Stir constantly for 30 seconds to bloom the spices.
- Pour in the full-fat coconut milk and broth.
- Stir until the curry base is smooth and combined.
- Return the browned chicken to the pot.
- Add the sweet potato cubes and diced red bell pepper.
- Stir gently to distribute everything evenly.
- Bring the mixture to a gentle simmer.
- Reduce heat to medium-low.
- Simmer uncovered for 20 minutes, stirring occasionally.
- Drain and rinse the chickpeas.
- Stir the chickpeas and fresh spinach or kale into the curry.
- Simmer for 5 more minutes until the greens wilt and the sweet potatoes are fork-tender.
- Add fresh lime juice.
- Season with sea salt and black pepper to taste.
- Remove from heat and rest for 3 minutes.
- Garnish with fresh chopped cilantro.
- Serve hot over rice, quinoa, or with Caribbean flatbread.
Notes
