Ingredients
Coconut cream – 1 cup (full-fat, chilled)
Protein powder – 1 scoop (~30g; vanilla or unflavored)
Almond butter – 1/2 cup (unsweetened)
Honey – 1/3 cup
Oats – 1 1/2 cups (gluten-free if needed)
Shredded coconut – 1/2 cup
Vanilla extract – 1 teaspoon
Dark chocolate chips – 1/2 cup
Instructions
Combine coconut cream, protein powder, almond butter, and honey in a bowl until smooth
Add oats, shredded coconut, vanilla, and chocolate chips; mix thoroughly
Press mixture into an 8×8-inch lined pan
Chill for 45 minutes
Cut into 12 bars and store in freezer
Notes
For nut-free version, substitute almond butter with sunflower seed butter
Use coconut milk in place of cream for a lighter texture
Store in airtight container in freezer up to 2 weeks
