A cottage cheese lava cake recipe delivers an elegant molten chocolate center with a tender, creamy texture and rich chocolate flavor. This French-inspired dessert looks restaurant-quality while remaining surprisingly simple to prepare at home.

  • Total Time: 27 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 ounces (115g) dark chocolate, 70% cocoa, finely chopped
  • 3 ounces (85g) unsalted butter
  • 2 large eggs, room temperature
  • 1 egg yolk, room temperature
  • ½ cup (115g) plain cottage cheese, drained if needed
  • 2 tablespoons (16g) all-purpose flour
  • 3 tablespoons (38g) granulated sugar
  • 1 tablespoon (8g) unsweetened cocoa powder
  • ½ teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 400°F (200°C) and position the rack in the center.
  2. Grease four ramekins or muffin cups generously with butter.
  3. Place the prepared ramekins on a parchment-lined baking sheet.
  4. Combine the chopped dark chocolate and unsalted butter in a microwave-safe bowl.
  5. Heat in 30-second intervals, stirring after each interval, until melted and smooth.
  6. Allow the chocolate mixture to cool for one minute.
  7. Stir the vanilla extract and sea salt into the melted chocolate mixture.
  8. Whisk the whole eggs and egg yolk in a separate bowl until slightly frothy.
  9. Gradually whisk the granulated sugar into the eggs until the mixture becomes pale and forms ribbons.
  10. Fold the cooled chocolate mixture gently into the egg mixture.
  11. Stir the cottage cheese and flour together in a separate bowl until smooth and free of lumps.
  12. Fold the cottage cheese mixture gently into the chocolate batter using minimal strokes.
  13. Divide the batter evenly among the prepared ramekins, filling each approximately three-quarters full.
  14. Bake for 12 minutes, until the edges are set but the centers still jiggle slightly.
  15. Remove the cakes from the oven and allow them to rest in the ramekins for one minute.
  16. Carefully invert each cake onto a serving plate.
  17. Dust lightly with unsweetened cocoa powder before serving.

Notes

Bring ingredients to room temperature before mixing for the smoothest batter. Drain excess liquid from the cottage cheese if needed, and avoid overbaking so the warm chocolate center remains perfectly molten.
