  • Total Time: 38 minutes
  • Yield: 24 bombs 1x

Ingredients

Scale
  • 1 pound fresh bread dough or pizza dough
  • ½ pound large shrimp, peeled, deveined, and chopped
  • ½ pound fresh or canned crab meat, drained
  • 4 ounces cream cheese, softened
  • ¾ cup mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • 4 tablespoons butter, melted
  • 6 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1½ teaspoons Old Bay seasoning
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper, to taste
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika, optional

Instructions

  1. Pat the shrimp dry with paper towels.
  2. Chop the shrimp into bite-sized pieces about ½ inch in size.
  3. Place the chopped shrimp in a medium mixing bowl.
  4. Add the crab meat to the bowl.
  5. Gently break up any large crab pieces while keeping the texture intact.
  6. Fold the softened cream cheese into the seafood mixture until evenly distributed.
  7. Add ½ cup shredded mozzarella cheese.
  8. Add the grated Parmesan cheese.
  9. Sprinkle in the Old Bay seasoning.
  10. Add the fresh lemon juice.
  11. Season with salt and black pepper to taste.
  12. Mix gently until all ingredients are combined without overmixing.
  13. Taste the filling and adjust seasoning if needed.
  14. Divide the bread dough into 24 equal pieces.
  15. Roll each piece into a ball about 1½ inches in diameter.
  16. Flatten each dough ball slightly with your palm to create a disk.
  17. Place about 1 tablespoon seafood filling in the center of each dough disk.
  18. Gather the dough edges around the filling.
  19. Pinch securely to seal completely.
  20. Roll each sealed bomb gently between your palms to create a smooth sphere.
  21. Arrange the filled bombs on a parchment-lined baking sheet, spacing them about 1½ inches apart.
  22. Combine the melted butter, minced garlic, garlic powder, and parsley in a small bowl.
  23. Brush each bomb generously with the garlic butter mixture.
  24. Sprinkle the remaining ¼ cup mozzarella cheese evenly over the bombs.
  25. Add a light sprinkle of smoked paprika and extra parsley if desired.
  26. Preheat the oven to 400 degrees Fahrenheit.
  27. Bake for 16 to 18 minutes until the bread is golden brown and the cheese is melted.
  28. Remove from the oven.
  29. Let the bombs cool for 2 to 3 minutes before serving.
  30. Transfer to a serving platter.
  31. Garnish with fresh parsley and lemon wedges if desired.
  32. Serve warm.

Notes

Pat the shrimp and crab very dry before mixing so the filling stays creamy instead of watery. Do not overfill the dough pieces, and pinch each bomb tightly to prevent leaking during baking. Serve warm within 5 to 10 minutes for the best crispy exterior and creamy seafood filling.
