Ingredients
4 cod fillets (6 ounces each)
1/4 cup fresh dill (chopped)
2 tablespoons lemon juice
2 tablespoons olive oil
3 cloves garlic (minced)
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons unsalted butter (melted)
Instructions
Preheat oven to 375°F (190°C)
Line a baking dish with parchment paper
In a bowl, combine dill, lemon juice, olive oil, garlic, salt, and pepper
Brush half the mixture over the bottom of the baking dish
Place cod fillets in the dish, brush melted butter on top, then drizzle remaining herb mixture over the fish
Bake for 12-15 minutes until flakes easily with a fork and edges are golden
Notes
Use wild-caught cod for best flavor and sustainability
Substitute olive oil for additional butter if preferred
Garnish with fresh lemon slices and extra dill before serving
Pair with roasted vegetables or quinoa for a complete meal
