Ingredients
4 cod fillets (about 6 ounces each)
3 tablespoons extra-virgin olive oil
2 lemons, 1 thinly sliced, 1 zest and juice
1/4 cup fresh dill, chopped
4 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat oven to 400°F (200°C)
In a small bowl, mix olive oil, lemon juice, 1/2 of the chopped dill, minced garlic, salt, and pepper
Place cod fillets in a baking dish, pour the marinade over them, and top with lemon slices and remaining dill
Bake for 12-15 minutes until fish flakes easily with a fork
Notes
Use fresh dill and lemon juice for optimal flavor; dried dill may be substituted in a pinch
Fish is done when internal temperature reaches 145°F (63°C)
Pairs well with garlic roasted potatoes or lemon herb quinoa
Store leftovers refrigerated in an airtight container for up to 2 days
