  • 3 tablespoons tomato paste
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1½ teaspoons salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • ½ cup Parmesan cheese, grated
  • 3 tablespoons fresh parsley, chopped

Instructions

  1. Fill a large pot with 6 quarts of water.
  2. Bring the water to a rolling boil over high heat.
  3. Add 2 tablespoons salt to the boiling water and stir until dissolved.
  4. Dice the yellow onion into ¼-inch pieces.
  5. Mince the garlic cloves.
  6. Measure the oregano, basil, and red pepper flakes into small bowls.
  7. Heat 2 tablespoons olive oil in a large heavy-bottomed skillet over medium-high heat.
  8. Add the ground beef to the hot oil.
  9. Break the beef apart with a wooden spoon as it cooks.
  10. Cook for 8 to 10 minutes until the beef develops a deep brown color and releases its fat.
  11. Drain excess fat, leaving a thin layer in the pan for flavor.
  12. Add the diced onion to the browned beef.
  13. Cook for 4 minutes, stirring occasionally, until the onion softens.
  14. Stir in the minced garlic.
  15. Cook for 1 minute until fragrant.
  16. Add the tomato paste.
  17. Stir constantly for 2 minutes to caramelize and deepen the flavor.
  18. Pour in the beef broth.
  19. Stir and scrape up any browned bits from the bottom of the pan.
  20. Add the tomato sauce to the beef mixture.
  21. Stir until completely combined.
  22. Add the dried oregano, dried basil, and red pepper flakes.
  23. Season with salt and black pepper.
  24. Reduce the heat to low.
  25. Simmer uncovered for 30 to 35 minutes, stirring occasionally.
  26. After the sauce has simmered for 20 minutes, add the spaghetti to the boiling salted water.
  27. Cook for 8 to 10 minutes until al dente.
  28. Reserve 1 cup of pasta water before draining.
  29. Drain the spaghetti in a colander.
  30. Add the drained spaghetti directly to the simmering sauce.
  31. Toss gently for 1 minute until the pasta is fully coated.
  32. Add reserved pasta water as needed to loosen the sauce.
  33. Remove from heat.
  34. Taste and adjust seasoning if needed.
  35. Top with grated Parmesan cheese and fresh chopped parsley.
  36. Serve warm.

Notes

Brown the beef deeply for the signature dirty flavor and dark color. Do not rush the simmering stage because it concentrates the sauce. Reserve pasta water before draining so the sauce coats the spaghetti smoothly.
