These high-protein, low-carb bowls combine juicy lean ground beef, fluffy cauliflower rice, and crisp cucumber for a light yet satisfying meal. A savory garlic, ginger, and lime-soy sauce ties it all together, making it perfect for weeknight dinners or meal prepping.

Ingredients

1 lb (450g) lean ground beef
2 cups cauliflower rice
1 medium cucumber, julienned
2 tbsp soy sauce (low sodium if preferred)
1 tbsp lime juice
1 tsp grated ginger
2 garlic cloves, minced
1 tbsp sesame seeds
2 tbsp chopped fresh cilantro
Salt and pepper to taste
1 tbsp olive oil or avocado oil

Instructions

Preheat a large skillet over medium heat and add cooking oil.
Add ground beef, breaking it apart with a spatula. Cook until browned and fully cooked (5-7 minutes), season with salt and pepper.
In the same skillet, add cauliflower rice, garlic, and ginger. Sauté for 5 minutes until tender but not mushy.
Stir in soy sauce and lime juice to create a light glaze. Mix well.
Divide cooked beef and seasoned cauliflower rice into 4 bowls.
Top with cucumber, cilantro, and sesame seeds before serving.

Notes

Customize with red pepper flakes for spice or avocado for creaminess
