Ingredients
1 lb (450g) lean ground beef
2 cups cauliflower rice
1 medium cucumber, julienned
2 tbsp soy sauce (low sodium if preferred)
1 tbsp lime juice
1 tsp grated ginger
2 garlic cloves, minced
1 tbsp sesame seeds
2 tbsp chopped fresh cilantro
Salt and pepper to taste
1 tbsp olive oil or avocado oil
Instructions
Preheat a large skillet over medium heat and add cooking oil.
Add ground beef, breaking it apart with a spatula. Cook until browned and fully cooked (5-7 minutes), season with salt and pepper.
In the same skillet, add cauliflower rice, garlic, and ginger. Sauté for 5 minutes until tender but not mushy.
Stir in soy sauce and lime juice to create a light glaze. Mix well.
Divide cooked beef and seasoned cauliflower rice into 4 bowls.
Top with cucumber, cilantro, and sesame seeds before serving.
Notes
Customize with red pepper flakes for spice or avocado for creaminess
Store leftovers in an airtight container in the refrigerator for up to 3 days
Cilantro and sesame seeds can be omitted for a more neutral flavor
