Ingredients

4 medium zucchinis
1 lb lean ground turkey
2 tbsp taco seasoning (no meat additive)
1 onion, diced
2 cloves garlic, minced
1 cup shredded mozzarella cheese
1/2 cup salsa (original or mild)
1 avocado, sliced

Instructions

Preheat oven to 400°F (200°C)
Cut zucchinis in half lengthwise and scoop out the seeds
Place zucchini on a baking sheet, salt the insides, and roast for 20 minutes
While roasting, cook turkey and garlic in a pan until browned
Add onion and taco seasoning to turkey; mix well
Fill roasting zucchini with turkey mixture and top with cheese
Return to oven for 10 minutes until cheese melts
Top with salsa and avocado before serving

Notes

Use shredded cheddar or another melty cheese if preferred
Add cooked black beans or corn kernels for extra texture (ensure canned varieties are no-sodium)
