2 medium zucchinis, diced
1 small onion, chopped
3 garlic cloves, minced
1 tbsp olive oil
1 tsp paprika
1 tsp ground cumin
1 tsp dried oregano
1 tsp salt

1 can (15 oz) diced tomatoes (undrained)
Fresh parsley or cilantro (optional, for garnish)
Instructions
Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned and cooked through.
Add onion and garlic; sauté until softened, about 3-4 minutes. Mix in paprika, cumin, oregano, salt, and pepper.
Stir in diced zucchini and cook for 5 minutes until tender. Add diced tomatoes and simmer for 8-10 minutes until slightly thickened.
Adjust seasoning if needed, then serve warm. Garnish with fresh herbs if desired.
