Ingredients
1 lb (450g) ground turkey
2 medium zucchinis, sliced
1 small onion, diced
2 garlic cloves, minced
1 cup crumbled feta cheese
2 tbsp olive oil
1 tsp dried oregano
1 lemon, juice and zest of
Salt and black pepper to taste
Instructions
Heat olive oil in a skillet over medium heat. Cook turkey with onion, garlic, salt, and pepper until browned.
Add zucchini, oregano, and lemon zest. Sauté until zucchini is tender-crisp (5-7 minutes).
Stir in feta cheese and cook until fully melted. Finish with a squeeze of lemon juice.
Season with additional salt and pepper if needed.
Notes
Use halal-certified ground turkey if preferred
Add chopped fresh basil or parsley for extra freshness
Serve with rice, quinoa, or bread if desired
