Zucchini (2 medium, ½-inch cubes)
Onion (1 medium, diced)
Garlic (3 cloves, minced)
Olive oil (2 tablespoons)
Salt (1 teaspoon)
Black pepper (½ teaspoon)
Instructions
Heat 1 tablespoon olive oil in a skillet over medium-high heat
Brown ground beef, breaking into small pieces, until no pink remains
Remove beef from skillet; drain excess fat if desired
In the same skillet, sauté diced onion in 1 tablespoon olive oil until softened (4-5 minutes)
Add minced garlic and cook 1-2 minutes
Toss in zucchini cubes; cook until tender (5-7 minutes)
Return cooked beef to the skillet; season with salt and pepper
Mix well and divide into airtight meal prep containers
Cool completely before refrigerating
Notes
Store in refrigerator for up to 4 days or freeze for 3 months
