Ingredients
2 ripe avocados
4 large hard-boiled eggs, chopped
1/2 cup peeled and chopped cucumber
1 tbsp fresh lemon juice
1/4 cup chopped fresh herbs (parsley or cilantro)
1/2 tsp salt
1/4 tsp black pepper
Instructions
Bring large pot of water to boil for eggs
crack eggs into chopped pieces in a bowl
mash avocado in separate bowl until smooth
fold in chopped eggs, lemon juice, herbs, salt and pepper
cut cucumber into 1″ slices and scoop out centers to make cups
fill cucumber cups with avocado-egg mixture
Notes
Use left-over hard-boiled eggs from meal prep
Experiment with mint, dill, or basil in filling
Store in airtight containers for up to 2 days
