Ingredients

1 small zucchini, spiralized
1/2 red onion, diced
1/2 bell pepper, diced
2 cloves garlic, minced
1 can diced tomatoes (no salt added)
1 tsp ground cumin
1 tsp chili powder
1/2 tsp smoked paprika
Salt to taste
Shredded cheddar cheese
Cilantro, chopped
Lime wedges

Instructions

Heat skillet, sauté onions and pepper until softened.
Add garlic and spices, cook 1 minute.
Add beef, cook until browned.
Stir in diced tomatoes and simmer 5 minutes.
Add zucchini noodles and cook 2-3 minutes until tender-crisp.
Season with salt and top with cheese and cilantro.
