Ingredients
2 cups full-fat Greek yogurt
8 oz cream cheese
1 cup fresh blueberries
3 tbsp honey
1 1/2 cups graham cracker crumbs
1 tsp vanilla extract
pinch of cinnamon (optional)
2 tbsp milk (optional for crust binding)
Instructions
In a large bowl, combine Greek yogurt and cream cheese until smooth.
Fold in washed blueberries and vanilla extract gently.
In a separate bowl, mix graham cracker crumbs with cinnamon and optional milk.
Scoop 1-2 tablespoons of the yogurt mixture into a small cookie scoop or spoon.
Roll the scoops in the graham cracker mixture to coat evenly.
Chill in the refrigerator for 15-30 minutes to firm up.
Serve cold or at room temperature.
Notes
For gluten-free version, substitute graham cracker crumbs with almond flour-blend
Chill for at least 30 minutes for maximum firmed texture
Optional: Add granola for extra crunch or a drizzle of melted dark chocolate
