4 boneless, skinless chicken breast halves (5 oz each)
2 cups cottage cheese (1% fat)
1/2 cup basil pesto
1 cup shredded mozzarella cheese
1/2 cup halal/compliant cherry tomatoes (halved)
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for pan-cooking chicken)
Instructions
Preheat oven to 375°F (190°C)
Season chicken breasts with salt, garlic powder, and pepper
Heat olive oil in skillet; cook chicken until browned (3-4 mins/each side)
In a bowl, mix cottage cheese and pesto
Layer cooked chicken in a 9×13-inch baking dish
Spread cottage cheese mixture over chicken
Top with mozzarella cheese and cherry tomato halves
Cover with aluminum foil; bake 15 mins, then remove foil and bake 10-12 mins until bubbly and golden
Notes
Use pesto marked halal/compliant if concerned about animal ingredients
Substitute fresh basil, garlic, walnuts, and olive oil to make homemade pesto
