Ingredients
1 lb skinless, boneless chicken breast
1 small red onion, finely chopped
1 cup shredded reduced-fat cheddar cheese
1 tbsp taco seasoning (without pork or alcohol)
1 tsp olive oil
1 large cucumber, hollowed into 12 cups
2 tbsp chopped fresh cilantro
2 tbsp salsa (optional)
Juice of 1 lime
Instructions
Preheat skillet over medium-high heat; add olive oil. Dice chicken and cook with taco seasoning and onion until fully browned. Stir in cheese until melted. Scoop mixture into cucumber cups, garnish with cilantro, salsa (optional), and lime wedges.
Notes
Store leftovers in airtight containers for up to 2 days. For meal prep, double the chicken mixture. Substitute avocado for extra healthy fat.
