Ingredients
2 boneless chicken breasts (6 oz total)
2 whole grain tortillas
1 cup cherry tomatoes (1/2 cup halved)
1/2 cup fresh basil leaves
1 cup fresh mozzarella cubes
1 tbsp olive oil
1 clove garlic (minced)
1 tsp salt
1/2 tsp black pepper
1 tbsp balsamic glaze
1/2 lemon (juiced)
Instructions
Preheat oven to 400°F (200°C) or prepare grill
Season chicken with half the salt, pepper, and garlic
Heat oil in pan over medium-high heat; cook chicken 4-5 minutes per side until golden
Toss tomatoes with remaining salt and pepper; set aside
Assemble wraps: layer tortilla with mozzarella, chicken, tomatoes, basil, and lemon juice
Spritz with balsamic glaze and roll tightly
Grill wraps on low heat for 30 seconds to warm tortillas
Notes
Marinate chicken in lemon juice/basil for 20 minutes for extra flavor
Substitute balsamic glaze with store-bought balsamic vinegar (check for alcohol content)
Store in air-tight containers for up to 2 days
