Ingredients
1 lb boneless, skinless chicken breast
1 medium zucchini
5 large eggs
1 cup shredded Parmesan cheese
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat oven to 375°F (190°C)
Cook and shred chicken breast
Shred zucchini and press to remove excess moisture
Season zucchini with garlic powder, onion powder, salt, and pepper
In a bowl, combine shredded chicken, zucchini, and half the Parmesan cheese
Spoon mixture into greased 12-cup baking dish
Beat eggs with Italian seasoning and pour evenly over the mixture
Top with remaining Parmesan cheese
Bake for 25 minutes or until eggs are set
Notes
Customize with fresh herbs like thyme or basil
Use shredded mozzarella or cheddar instead of Parmesan
Refrigerate for up to 3 days or freeze for 2 months
Add sautéed spinach or bell peppers for extra veggies
