Ingredients
1.5 lbs boneless skinless chicken breast
3 medium zucchini
2 cups shredded mozzarella cheese
1 cup ricotta or cottage cheese
2 cloves garlic
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1/4 cup fresh basil
Instructions
Preheat oven to 375°F (190°C)
Finely dice zucchini and garlic; squeeze zucchini to remove excess moisture
In a bowl, mix ricotta or cottage cheese, Italian seasoning, salt, pepper, and fresh basil with garlic-zucchini
Brown chicken breasts in olive oil on both sides
Layer cooked chicken in a baking dish, spread zucchini-ricotta mixture over it
Top with shredded mozzarella cheese
Bake for 25-30 minutes until bubbly and golden
Let rest 10 minutes before serving
Notes
Ricotta adds creaminess; cottage cheese is a lighter substitute
Double the garlic if zucchini needs more flavor balance
Test bake time at 25 minutes to avoid undercooked mozzarella
