2 cups sliced cucumber
8 whole-grain bread slices
1 cup chopped fresh tomatoes

Instructions
Preheat oven to 350°F (175°C) and lightly oil baking sheets.
Slice bread thickness preference and toast bread until golden and crisp (5 minutes total).
In a bowl, mix cottage cheese, garlic, salt, pepper, and lemon juice until smooth.
Top each bread slice with cottage cheese mixture and cucumber slices.
Add chopped tomatoes, basil, and drizzle with olive oil.
Finish with optional seasoning like red pepper flakes.
Notes
Use 1% or Greek-style cottage cheese for higher protein.
Store extras in airtight containers (unbaked bread only) for up to 24 hours.
