Ingredients
2 cups cottage cheese (low-fat or full-fat)
1 medium cucumber, grated
1 tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon everything bagel seasoning
1 clove garlic, minced
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
Salt to taste
Optional: 1 small carrot, grated (for added texture and color)
Instructions
Grate the cucumber into a bowl and set aside.
In a separate large mixing bowl, add the cottage cheese and mash or blend with a fork or hand blender until smooth.
Add the olive oil, lemon juice, everything bagel seasoning, minced garlic, and fresh dill to the cottage cheese. Mix well.
Fold the grated cucumber into the cottage cheese mixture and stir until evenly combined.
Season with salt to taste.
Chill in the refrigerator for at least 10-15 minutes before serving to allow the flavors to meld.
Serve with fresh vegetables, pita chips, or whole-grain crackers.
Notes
For a smoother texture, you can blend the mixture in a food processor.
Store leftovers in an airtight container in the refrigerator for up to 2-3 days.
To make this vegan, substitute the cottage cheese with plant-based cottage cheese made from tofu or soy.
