Ingredients
15 oz (425g) low-fat cottage cheese
1 cup (150g) shredded mozzarella cheese
1/2 cup marinara sauce
1/4 cup finely chopped garlic and onion mix
1/4 cup diced peppers (bell peppers or jalapeños)
1/4 cup chopped fresh basil
1 tsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
Instructions
Preheat oven to 375°F (190°C)
Line 24 muffin tins with mini parchment paper liners
In a bowl, mix cottage cheese with garlic, onion, salt, pepper, and Italian seasoning
Spoon mixture into muffin tins, pressing into smooth rounds
Top each with marinara sauce, mozzarella cheese, and diced peppers
Lightly brush tops with olive oil
Bake for 18 minutes until cheese melts and edges crisp
Let cool slightly before lifting out with a small spatula
Notes
Substitute marinara with sugar-free sauce for low-carb version
Add sliced mushrooms or spinach as toppings
Store in airtight container up to 3 days
