Ingredients
4 medium cucumbers
1 cup high-protein cottage cheese (4% fat)
1/2 cup salsa (mild, halal-certified)
1 lime, cut into wedges
2 tbsp fresh cilantro, chopped
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. Wash and dry cucumbers
2. Scoop out inner cucumber flesh to create 4 mini boats (save scraps for salad)
3. Stuff each boat with 2 tablespoons of cottage cheese
4. Top each with 1 tablespoon salsa
5. Garnish with cilantro and lime wedges
6. Season with salt and pepper immediately before serving
Notes
Use halal-certified cottage cheese for dietary compatibility
Store filled boats in airtight container for up to 2 hours
Add avocado slices or radishes for extra crunch
