Ingredients
1 1/2 cups cottage cheese (1% milk fat, low sodium)
2 tbsp olive oil
1/4 cup chopped fresh basil
1/2 tsp sea salt
1/4 tsp black pepper
12 slices sourdough or whole grain bread
3 large ripe tomatoes, cut into 12 slices (1 per 2 toast) per serving
Instructions
Preheat oven to 400°F (200°C)
Blend cottage cheese with olive oil, basil, salt, and pepper in a food processor
Place bread slices on a baking sheet
distribute cottage cheese mixture evenly over each slice
Arrange tomato slices on top
Bake for 10-12 minutes until golden and bubbly
Notes
Sprinkle nutritional yeast for extra protein
Use almond or gluten-free bread for customization
Store in an airtight container in fridge for up to 3 days
