Ingredients
6 hard-boiled eggs, peeled and mashed
4 oz sliced turkey breast
2 tbsp mayonnaise (non-alcoholic)
1/4 cup diced celery
1 tsp fresh dill or parsley
1/2 tsp Dijon mustard
4 whole wheat English muffins
Salt and pepper to taste
Instructions
Mash hard-boiled eggs in a bowl
Add mayonnaise, Dijon mustard, salt, and pepper
Stir in diced turkey, celery, and herbs
Toast English muffins
Spread egg-turkey mixture atop each muffin half
Garnish with additional herbs if desired
Notes
Toast muffins until golden for extra crunch
Use Greek yogurt instead of mayonnaise for lower fat
