Ingredients
1 ½ pounds ground chicken (93% lean)
6 egg whites
1 medium red bell pepper (shredded)
½ cup finely chopped onion
2 cloves garlic (minced)
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
¾ teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive oil (for cooking)
Instructions
Preheat oven to 375°F (190°C) or heat oven-safe skillet over medium heat with olive oil
In a bowl, mix ground chicken, egg whites, bell pepper, onion, garlic, parsley, oregano, salt, and pepper until combined
Shape mixture into 12 bite-sized patties (about 1 ½ inches in diameter)
Sear patties in skillet for 3-4 minutes per side until browned, or bake for 15 minutes per side
Let cool slightly before serving
Notes
Use fresh lemon juice or apple cider vinegar for extra moisture
Add 1 chopped carrot or zucchini for additional fiber
Store in airtight containers (baked) for 4 days or freeze for up to 3 months
