Ingredients
12 egg whites
1/2 cup milk
1 cup grated mozzarella cheese
1/2 cup tomato sauce
1/4 cup chopped bell peppers
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Pinch of salt and black pepper
Instructions
Preheat oven to 350°F (175°C)
Lightly grease 12 mini muffin tins with olive oil
In a bowl, whisk egg whites, milk, and seasonings until well combined
Spoon 1 tsp of batter into each tin
Add 1/2 tsp mozzarella cheese to each cup
Spoon 1/2 tsp tomato sauce on top
Sprinkle chopped bell peppers and remaining mozzarella
Bake 18-20 minutes until egg whites are golden
Notes
Store in airtight container in fridge for up to 4 days
Freeze unbaked cups and bake from frozen with 3-5 minutes added
Customize toppings with spinach, mushrooms, or olives
Use olive oil instead of butter for greasing
