Instructions
Preheat oven to 375°F (190°C)
Grease a 12-cup muffin tin
In a large bowl, whisk egg whites until frothy
Sauté onion and bell pepper in olive oil until softened
Add spinach, parsley, garlic powder, onion powder, and black pepper to egg white mixture
Fold in sautéed vegetables and feta cheese until combined
Spoon batter evenly into prepared muffin tin
Bake for 22-25 minutes until edges are golden
