Ingredients
1 pound (450g) lean ground turkey
4 cups mixed greens
1 cup halved cherry tomatoes
1/2 small cucumber, sliced
1/4 small red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 cup chopped fresh herbs (parsley and mint recommended)
Instructions
Preheat grill or grill pan to medium-high heat
In a bowl, mix ground turkey with garlic powder, paprika, salt, and pepper
Divide into 4 equal patties and flatten slightly with fingers
Brush olive oil on both sides of patties and grill for 5-6 minutes per side until fully cooked
In a large serving bowl, toss mixed greens with cherry tomatoes, cucumber, red onion, lemon juice, and chopped herbs
Place 1 patty on top of each salad serving and drizzle with remaining dressing
Notes
To keep patties from sticking, ensure the oil is hot before adding
Adjust spices to taste – add cumin or herbs for extra flavor
Store unused patties in the fridge (up to 2 days) or freeze for later
Use a halal-certified turkey if required
