Ingredients
1 lb (450g) lean ground chicken
1 medium green cabbage, thinly sliced (4 cups)
8–10 butter lettuce leaves
1/2 cup peeled julienned carrots
2 green onions, sliced
3 cloves garlic, minced
1 tbsp grated ginger
2 tbsp soy sauce
2 tsp sesame oil
1 tsp vegetable oil
Salt to taste
2 tsp rice vinegar(diet: Low-Calorie, cuisine: Asian Fusion)
Instructions
Preheat skillet on medium-high with 1 tsp oil
Cook ground chicken, breaking into pieces, until browned
Add garlic, ginger, carrots, and cabbage
Stir-fry 5-7 minutes until cabbage wilts and slightly caramelizes
Stir in soy sauce, sesame oil, vinegar, and salt
Microwave butter lettuce leaves 15-20 seconds to soften (optional)
Spoon chicken mixture onto lettuce leaves and serve
Notes
Chop cabbage fine for even cooking
Store cooked chicken in airtight container up to 3 days
Serve lettuce wraps chilled or at room temp
