Ingredients
4 oz boneless skinless chicken breast
1 medium cucumber, diced
1/4 cup fresh dill, chopped
1/2 cup plain Greek yogurt
1 tbsp lemon juice
1 tsp olive oil
1 clove garlic, minced
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat oven to 375°F (190°C) or heat a skillet over medium heat.
Season chicken with salt and pepper. Cook until fully done, about 6-8 minutes (stovetop) or 12 minutes (oven).
Let chicken cool, then slice into strips.
Combine cucumber, dill, yogurt, lemon juice, olive oil, garlic, salt, and pepper in a bowl.
Fold in cooked chicken and serve chilled or at room temperature.
Notes
Substitute feta cheese for extra tanginess.
Store leftover dressing separately from chicken and veggies for up to 2 days.
Use zucchini or bell peppers for added texture.
