1 lb boneless, skinless chicken breast
4 cups mixed greens (spinach, kale, arugula)
1 cup halved cherry tomatoes
1 medium cucumber, sliced
2 tbsp olive oil
1 lemon (zested and juiced)
2 cloves minced garlic
1 tsp dried oregano
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/4 cup diced red onion
2 tbsp fresh parsley, chopped
Instructions
Preheat grill to medium-high heat (375°F-400°F)
Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl for marinade
Submerge chicken breast in marinade, cover, and refrigerate for 10-15 minutes
Grill chicken 5-6 minutes per side until golden and cooked through
Toss mixed greens with cherry tomatoes, cucumber, red onion, and parsley
Top with grilled chicken and a drizzle of remaining marinade as dressing
