Ingredients
2 cod fillets (4–6 oz each)
1 head of cauliflower
1 tbsp olive oil
2 cloves garlic
1 lemon
1 tsp fresh herbs (dill or parsley)
Salt and pepper to taste
Instructions
Prep cod and pat dry
Heat olive oil in skillet; sear cod for 4-5 mins per side
Steam cauliflower with garlic until tender
Mash with olive oil and lemon juice
Season with herbs, salt, and pepper
Plate cod over mash
Notes
Use ghee instead of olive oil for a nuttier flavor
Freeze leftovers for up to 2 months
Serve with a side salad for added crunch
