Ingredients
1 tablespoon olive oil
1 pound cod fillets, skinless
1 medium zucchini, sliced
1 cup cherry tomatoes, halved
2 garlic cloves, minced
1 lemon, juiced
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/2 teaspoon dried dill
Salt and black pepper to taste
1 tablespoon fresh parsley, chopped
Instructions
Heat olive oil in a large skillet over medium heat.
Sauté zucchini for 3-4 minutes until tender-crisp.
Add minced garlic and cook for 1 minute.
Place cod fillets in the skillet, season with oregano, dill, salt, and pepper.
Add cherry tomatoes and lemon juice to the pan.
Simmer for 4-5 minutes until cod is opaque and flaky.
Garnish with fresh parsley before serving.
Notes
Use fresh herbs if available for brighter flavor. For extra richness, add a splash of water or vegetable broth instead of fat. Serve with quinoa or couscous for added fiber.
