Ingredients

8 large egg whites
1 cup fresh spinach, chopped
1 cup cherry tomatoes or diced tomatoes
1/4 cup diced red onion
3 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1/4 tsp dried basil or thyme (optional)

Instructions

Preheat oven to 350°F (175°C)
Grease a 9×13-inch baking dish
In a large bowl, whisk egg whites until slightly off-white
In a skillet, heat olive oil, sauté garlic and onion until softened
Add spinach and tomatoes, cooking until wilted
Season with salt, pepper, and herbs
Pour mixture into prepared baking dish
Bake for 30-35 minutes until set and edges brown
Let cool slightly before serving
Optional: Garnish with fresh cilantro or parsley
