12 large egg whites
1 cup ground turkey breast
1 red bell pepper, diced
1/2 cup fresh spinach, chopped
1 small onion, finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Salt and black pepper to taste
1 tablespoon olive oil for spray (optional)
Instructions
Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin
Sauté onion, bell pepper, and spinach in olive oil until softened
In a bowl, combine cooked veggies, egg whites, ground turkey, herbs, salt, and pepper
Divide mixture evenly into prepared muffin tin cups
Bake for 22-25 minutes until egg whites are fully cooked
Cool slightly before storing in an airtight container
