Ingredients

2 cups grated zucchini
1 cup liquid egg whites
1/2 cup halal-certified low-fat feta cheese, crumbled
1/4 cup chopped fresh parsley
2 cloves minced garlic
1 tbsp olive oil
Salt to taste
Black pepper to taste

Instructions

Preheat oven to 375°F (190°C)
Grease a 9×9-inch baking dish with olive oil
Combine grated zucchini, egg whites, feta, parsley, and garlic in a bowl
Mix until just combined, avoiding over-stirring
Pour batter into prepared baking dish
Sprinkle additional parsley on top for garnish
Bake for 35 minutes or until edges are golden and center is firm
Let cool slightly before slicing into 4 portions

Notes
