Ingredients
1 (6 oz) chicken breast
1 tbsp olive oil
Juice of 1 lemon
1 garlic clove, minced
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper to taste
2 cups mixed greens
1 avocado, sliced
1 cup halved cherry tomatoes
1/4 cup thinly sliced red onion
2 tbsp olive oil for dressing
1 tbsp lemon juice
1 tbsp chopped fresh parsley
Instructions
Combine chicken, olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper in a bowl; marinate 20 minutes.
Preheat grill or skillet over medium-high heat. Cook chicken 5-6 minutes per side until golden and slightly charred. Rest 5 minutes, then slice.
Toss mixed greens, cherry tomatoes, red onion, and avocado in a large bowl. Top with sliced chicken.
Whisk dressing: combine 2 tbsp olive oil, lemon juice, and parsley in a small bowl. Drizzle over salad before serving.
Notes
Marinate chicken longer for deeper flavor, up to 4 hours.
Use a stovetop skillet instead of a grill if preferred.
Store leftovers in an airtight container for up to 2 days (keep dressing separate).
