Ingredients
1 (6 oz) salmon fillet, skin-on
1 medium cucumber (5 oz), grated
2 tablespoons Greek yogurt
1 tablespoon lemon juice
1 clove garlic, minced
1 teaspoon fresh dill
1 teaspoon olive oil
1/2 teaspoon salt
Black pepper to taste
Instructions
Preheat oven to 375°F (190°C)
Season salmon with salt and pepper in a baking dish
Bake for 12 minutes until cooked through
Meanwhile, mix grated cucumber with garlic and dill in a bowl
In another bowl, whisk Greek yogurt with lemon juice and salt
Serve salmon with cucumber mixture and yogurt sauce

Alternate cooking method: Sear salmon in olive oil for 4-5 minutes
