Ingredients
1 lb ground turkey (93% lean)
1 head of cauliflower, riced
1 tsp olive oil
2 cloves garlic, minced
1 small onion, diced
1 tsp ground cumin
1 tsp paprika
1 tsp dried oregano
Salt and pepper to taste
4 large lettuce leaves (butter or romaine)
1/2 cup diced tomatoes
2 green onions, sliced
1/4 cup plain Greek yogurt (non-fat)
1 tbsp fresh lime juice
Instructions
Heat olive oil in a skillet over medium heat. Add garlic and onion, sauté until fragrant and slightly softened.
Add ground turkey and cook until browned and no longer pink.
Stir in cauliflower rice, cumin, paprika, oregano, salt, and pepper. Cook for 5-7 minutes, until the cauliflower is tender.
Remove from heat and stir in diced tomatoes and green onions.
In a small bowl, mix Greek yogurt and lime juice for dressing.
Place lettuce leaves on serving plates, spoon the turkey and cauliflower mixture into each leaf, and drizzle with the yogurt-lime dressing.
Serve immediately.
Notes
For a vegan version, substitute ground turkey with plant-based crumbles and Greek yogurt with coconut yogurt.
You can use any lettuce type you prefer, such as iceberg, butter, or romaine.
Add additional veggies like bell peppers or shredded carrots for more texture and nutrition.
