Ingredients
1 lb (450g) lean ground turkey
2 cups cauliflower rice
1 small onion, diced
1 jalapeño, finely chopped (optional)
1 tsp chili powder
1 tsp ground cumin
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp sea salt
8 small corn tortillas
1/2 cup salsa
1/4 cup diced avocado
Juice of 1 lime
Fresh cilantro, chopped
Instructions
Heat a large skillet over medium heat and add 1 tsp oil. Brown the ground turkey until no longer pink.
Add diced onion and jalapeño (if using). Sauté until vegetables soften, 3-4 minutes.
Stir in chili powder, cumin, paprika, garlic powder, and sea salt. Cook 2 minutes to bloom spices.
Toss in cauliflower rice and cook 3-4 minutes until slightly tenderized.
Warm tortillas in a dry skillet or microwave.
Assemble tacos with turkey-rice mixture, salsa, avocado, lime juice, and cilantro.
Notes
Use leftover cooked turkey or rotisserie chicken for time efficiency.
Substitute zucchini or bell peppers for additional fiber.
Store leftovers in an airtight container for up to 3 days.
