Ingredients
1 lb (450g) ground turkey
1 cup (150g) diced cucumber
1/2 cup (75g) diced red onion
1/2 cup (75g) diced tomatoes
1 jalapeno, finely chopped
2 tbsp olive oil
1 tbsp lime juice
1 tbsp chili powder
1 tsp ground cumin
Salt and pepper to taste
1/4 cup chopped cilantro
1/4 cup lime zest
Instructions
Preheat a skillet over medium-high heat.
Add ground turkey and sauté for 8-10 minutes until browned and cooked through.
Season with salt, pepper, cumin, and chili powder during cooking.
In a bowl, combine cucumber, red onion, tomatoes, jalapeno, lime juice, and half the cilantro.
Whisk olive oil into salsa mixture just before serving.
Divide turkey among bowls and top with salsa.
Finish with remaining cilantro and lime zest.
