Ingredients
1 pound lean ground turkey (93% lean)
1 medium onion, finely chopped
1 bell pepper (red, green, or yellow), diced
1 can diced tomatoes, no salt added (14.5 oz)
1 teaspoon taco seasoning
1/2 teaspoon chili powder (optional for heat)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Juice of 1/2 fresh lime
1 cup shredded iceberg or romaine lettuce (for lettuce boats)
Fresh cilantro, chopped (for garnish)
1/2 ripe avocado, sliced (for garnish)
Lettuce leaves (for serving)
Instructions
Preheat a large skillet or pan over medium heat and add a light drizzle of olive oil.
Add the chopped onion to the pan and sauté for 2-3 minutes until softened.
Add the ground turkey and cook, breaking it into small pieces, until no longer pink, about 5-7 minutes.
Stir in the diced bell pepper and cook for 2 more minutes.
Add the diced tomatoes, chili powder, garlic powder, onion powder, and taco seasoning. Stir to combine and let simmer for 5 minutes.
Squeeze in the lime juice and stir to brighten the flavors.
Turn off the heat and let the mixture cool slightly.
Using iceberg or romaine lettuce, create ‘boats’ by placing a cupped lettuce leaf on a plate and filling it with the turkey mixture.
Top each serving with fresh cilantro, avocado slices, and extra lime juice if desired.
Notes
For more fiber and crunch, add shredded cabbage or jicama as a topping.
Feel free to use a mix of lettuce such as romaine and butter lettuce for extra flavor.
For a spicy kick, add a pinch of cayenne pepper or a few dashes of your favorite hot sauce.
