Ingredients
1 lb ground turkey
2 medium zucchinis, spiralized
1 can (14 oz) diced tomatoes
3 cloves garlic, minced
2 tbsp olive oil
1 tsp dried oregano
1 tsp paprika
0.5 tsp black pepper
0.5 tsp cayenne pepper
1 onion, diced
1 carrot, grated
1 cup low-sodium chicken broth
1 tbsp honey (optional for sweetness)
Fresh parsley, chopped for garnish
Instructions
Heat 1 tbsp olive oil in a large skillet over medium heat
Cook and crumble ground turkey until fully browned
Add garlic, oregano, paprika, pepper, cayenne, and sauté for 2-3 minutes
Stir in diced tomatoes and chicken broth, simmering for 8-10 minutes
Sauté onions and carrots in remaining oil in a separate pan until softened
Toss spiralized zucchini noodles in to soften slightly (1-2 minutes)
Divide noodles into bowls, top with turkey sauce, and garnish with parsley
Notes
Spiralize zucchini 10 minutes before cooking to avoid sogginess
Use a non-stick pan to prevent sticking
Add honey for a touch of sweetness if desired
Store leftovers in an airtight container for 3-4 days
